CIRRUS…a work of Art to be crunched!

Dare to… Simply daring… Perhaps because nothing stops him and because no great pastry chef of renown had, until now, dared or had the idea of working with the CBD in pastry, Philippe Conticini decided to explore this innovative product which he has slipped into his brand new cake: “Cirrus”. A real first in the hushed world of French haute pâtisserie. And the result is, to say the least, absolutely convincing! A cake that will be available in very limited quantities, as part of the opening of his new boutique, at 31 Notre-Dame de Nazareth Paris 3rd, from 12 December 2020.  

What is the CBD about? In spite of its price per kilo (three to ten times more expensive than truffles or caviar), CBD has been attracting more and more people for several years now, but most often for its relaxing and soothing properties alone. It belongs to the family of adaptogenic plants in the same way as ashwagandha, maca root, rhodiola, Siberian ginseng or sacred basil. Now, with the work of Philippe Conticini, these affi cionados, like all the others, greedy, curious and lovers of new sensations, will be able to (re)discover this product, but this time, for its gustative qualities.
