The Chateau d’Estoublon, pearl of the Baux de Provence

The Chateau d’Estoublon, pearl of the Baux de Provence

Following its purchase in early 2020 by LOV Group, in association with the Prats family, the chateau, which spans 1,500m2 over two floors, has been completely renovated to accommodate guests in 10 unique suites, none of which are like the other.

The estate is also home to La Table d’Estoublon, a new restaurant led by chef Wim Van Gorp with authentic and refined cuisine, allowing enthusiasts to come and discover the site and taste the products of the property, including vegetables from the organic permaculture garden. On the sweet side, Christophe Michalak will sign the dessert menu with unique creations for La Table d’Estoublon, to be discovered in the spring.

The 300-hectare property faces due south on the limestone foothills of the Baux-de-Provence. The 18-hectare vineyard is entirely managed organically by the Director of Operations and oenologist, Anaïs Maillet. The iconic grape varieties of Provence are king. The estate is currently in conversion to biodynamic farming, ever more concerned with preserving its environment and the excellence of its wines.

A new great rosé is coming out of the cellars this year, Roseblood, the youngest son of the Estoublon family, with an assertive design that breaks the codes of rosé. It is the reflection of this Provence of the land, untamed and free, where flavors of grapefruit, fresh flowers and sweet lychee resound.

Finally, 120 hectares of olive groves surround the Château, also managed in integrated and organic farming. A specialist in single variety olive oils, Château d’Estoublon has seen three of its oils elected best olive oils in the world in 2020 at the NYIOOC.
